永續飲食應對氣候變遷 - 2024外食消費調查分析報告

2024第九屆星級溯源餐廳頒獎典禮暨外食消費調查分析報告探討了餐飲業如何應對氣候變遷挑戰,推動永續飲食風潮。本次報告分析了外食消費趨勢,評估了各大餐廳在食材溯源方面的表現,並表彰了在這些領域中表現突出的餐廳。透過此報告,我們希望引導消費者和業者共同關注環境保護,推動更為綠色和可持續的飲食文化。
The “9th AMOT Traceability Restaurant Star Rating Assessment Awards Ceremony and Out-of-Home Dining Consumption Survey Analysis Report (2024)” explores how the food and beverage industry responds to the challenges of climate change and promotes the trend of sustainable dining. This report analyzes out-of-home dining consumption trends, evaluates the performance of restaurants in ingredient traceability, and recognizes outstanding restaurants in these areas. Through this report, we aim to encourage both consumers and industry stakeholders to place greater emphasis on environmental protection and jointly promote a greener and more sustainable food culture.

隨著氣候變遷和環境永續問題日益嚴峻,食品安全和食材來源的透明度變得越來越重要。
其中食物中毒被認為是最令消費者擔憂的食品安全事件,食安事件對健康威脅是難以預防的。因此,消費者對於產品品質認證和食材來源的重視程度日益增加。他們在購買食品時,優先考慮的是食材的品質和來源,其次是新鮮度、用餐環境、服務品質和價格。

As climate change and environmental sustainability issues become increasingly severe, food safety and transparency in ingredient sourcing have become more important than ever. Among food safety concerns, foodborne illness is regarded as one of the most worrying incidents for consumers, as its health risks are difficult to prevent. As a result, consumers are placing greater emphasis on product quality certification and the origin of ingredients. When purchasing food, they prioritize ingredient quality and origin, followed by freshness, dining environment, service quality, and price.

  

根據此分析報告顯示,對有機食材和產銷履歷食材的認識和需求正在增長。這意味著,大眾對於食品安全和品質有關注的程度越來越多,他們更願意選擇具有認證或履歷的食材以確保食品的安全和可追溯性。此外,消費者對於提供食材來源及進貨資訊的餐廳表示更高的用餐意願,顯示了消費者對於食品安全和資訊透明度的高度重視。

According to the analysis report, awareness and demand for organic ingredients and traceable agricultural products are steadily increasing. This indicates that public concern for food safety and quality continues to grow, with more consumers willing to choose certified or traceable ingredients to ensure food safety and transparency. In addition, consumers show a higher willingness to dine at restaurants that provide clear information on ingredient sourcing and procurement, demonstrating the importance of food safety and information transparency.


在應對氣候變遷的挑戰中,推動溯源餐廳的發展不僅能提高食品安全,還能促進環境永續。
透過選擇具有環保認證和可追溯性的食材,消費者和業者共同推動可溯源又安全的飲食文化,為保護環境和應對氣候變遷做出貢獻。

In response to the challenges of climate change, promoting Traceability Restaurant not only enhances food safety but also supports environmental sustainability. By choosing environmentally certified and traceable ingredients, both consumers and industry stakeholders can jointly foster a safe and transparent dining culture, contributing to environmental protection and climate action.
